Margarita
Ingredients
- 35ml/1¼fl oz tequila
- 20ml/¾fl oz orange liqueur, such as Cointreau
- 35ml/1¼fl oz fresh lime juice
- handful ice cubes
- lime wedge, to garnish
Method
Pour the Tequila, orange liqueur and lime juice into a cocktail shaker.
Add a handful of ice cubes and shake vigorously for 10-15 seconds.
Strain into a martini glass with half the rim damped with water, then dipped in salt.
Add a lime wedge on the rim by way of garnish.
Elderflower Collins
Ingredients
- 2 handfuls ice
- 60ml/2fl oz gin
- 30ml/1fl oz freshly squeezed lemon juice
- 15ml/½fl oz elderflower cordial
- soda water, to taste (about 125ml/4fl oz)
- lemon slice, to garnish (optional)
Method
Fill a cocktail shaker with ice. Pour the gin, lemon juice and elderflower cordial over the ice then shake vigorously for 8-10 seconds.
Strain the mixture into a collins glass over fresh ice using a hawthorne cocktail strainer and a fine mesh strainer. If you don’t have a strainer, any kitchen sieve will work just as well.
Top with the soda water and give it a gentle stir to combine everything. Garnish with the lemon slice if using.
Pimms
Ingredients
- 2 handfuls ice
- 240ml/8¾fl oz Pimm’s No.1 Cup
- 600ml/20fl oz lemonade or ginger ale
- 4 strawberries, sliced
- cucumber wheels, to garnish
- fresh mint sprigs, to garnish
Method
Fill a jug or four highball glasses with ice, then pour over the Pimm’s.
Top with the lemonade or ginger ale and stir carefully to combine.
Garnish the Pimm’s with the sliced strawberries, cucumber wheels and mint sprigs.
Mojito
Method
Place the limes, mint and sugar into a sturdy highball glass and ‘muddle’ or mash with the end of a clean rolling pin, to bruise the mint and release the lime juice.
Add the ice and pour over the rum.
Add soda water to taste and stir well. Garnish with a mint sprig and serve.
Singapore Sling
Ingredients
- 40ml/1⅓fl oz gin
- 25ml/1fl oz freshly squeezed lemon or lime juice
- 80ml/3fl oz pineapple juice
- 10ml cherry brandy
- 10ml grenadine
- 5ml Bénédictine
- 5ml orange liqueur (such as triple sec)
- dash Angostura bitters
- 2 handfuls ice
- soda water
- lemon slices, to garnish (optional)
Method
Add all the ingredients except the soda water and lemon slices to a cocktail shaker. Make sure it’s filled with ice then shake to combine everything.
Fill a collins glass with fresh ice and strain the mixture into it using a hawthorne cocktail strainer and a fine mesh strainer. If you don’t have a strainer, any kitchen sieve will work just as well.
Top with the soda water to taste and stir gently, then garnish with a lemon slice if using.
Black Velvet
Ingredients
- 125ml/4fl oz Guinness
- 125ml/4fl oz champagne
Method
Pour the Guinness into a flute, filling it about halfway.
Top up the flute with the champagne, pouring it slowly over the back of a spoon into the glass.
