Margarita

Ingredients

Method

  1. Pour the Tequila, orange liqueur and lime juice into a cocktail shaker.

  2. Add a handful of ice cubes and shake vigorously for 10-15 seconds.

  3. Strain into a martini glass with half the rim damped with water, then dipped in salt.

  4. Add a lime wedge on the rim by way of garnish.

Elderflower Collins

Ingredients

  1. Fill a cocktail shaker with ice. Pour the gin, lemon juice and elderflower cordial over the ice then shake vigorously for 8-10 seconds.

  2. Strain the mixture into a collins glass over fresh ice using a hawthorne cocktail strainer and a fine mesh strainer. If you don’t have a strainer, any kitchen sieve will work just as well.

  3. Top with the soda water and give it a gentle stir to combine everything. Garnish with the lemon slice if using.

Pimms

Method

  1. Fill a jug or four highball glasses with ice, then pour over the Pimm’s.

  2. Top with the lemonade or ginger ale and stir carefully to combine.

  3. Garnish the Pimm’s with the sliced strawberries, cucumber wheels and mint sprigs.

Mojito

  1. Place the limes, mint and sugar into a sturdy highball glass and ‘muddle’ or mash with the end of a clean rolling pin, to bruise the mint and release the lime juice.

  3. Add soda water to taste and stir well. Garnish with a mint sprig and serve.
